Ingredients:
- 1 Cup white sugar
- ¼ Cup water
- 1 Cup cream
- 1 Tsp. Maldon Salt
Method:
- Place the sugar and water into a pot with a lid and bring to a boil and it starts to caramelise.
- Swirl the pot every now and then. but do not remove the lid as this stops crystallisation.
- As the colour starts to change, turn off the heat and remove it while swirling.
- Add cream and salt to the caramel, it will split and bubble just keep stirring.
